The oven knows what's inside.

Optical sensors look at every tray as it goes in. The oven compares what it sees with its stored cooking profiles and starts the matching program by itself, so an untrained crew gets the same croissant as your best baker.

Fryer monitoring and exhaust operations

Exhausts that follow the fryers, not the clock.

A camera over the fry station sees which vats are cooking and when the station goes quiet. The exhaust fans ramp with that activity instead of running flat out all day, and the crew hears about a basket before it goes over.
